The Complete Honey Guide
Everything worth knowing about honey, raw honey and beekeeping — from how bees make it, to the many types, to how you can tell whether a jar is genuinely pure. Think of this as a reference library you can return to any time.
1. What is honey?
Honey is a natural sweet food made by honey bees from the nectar of flowers. Bees gather the nectar, transform it inside the hive, and store it in the wax comb as a concentrated energy reserve for the colony. What we buy in a jar is that same store, carefully harvested.
By composition, honey is mostly two natural sugars — fructose and glucose — together with water (usually around 17–20%), and small amounts of other sugars, natural enzymes, amino acids, minerals, pollen grains and aromatic compounds. Those trace components are tiny by weight, yet they carry the colour, aroma and personality of each honey.
This is also why no two honeys are quite the same. The flowers the bees visit, the season, the soil and the region all leave their mark — so a forest multifloral and a single-flower honey can look and taste completely different while both being entirely genuine.
2. How bees make honey
It begins with the forager bees. They visit flower after flower, drawing up nectar and storing it in a special honey stomach. Even on the journey home, natural enzymes start breaking the nectar’s complex sugar into the simpler fructose and glucose that make up honey.
Back at the hive, the nectar is passed mouth to mouth between worker bees, which adds more enzymes and begins concentrating it. The bees deposit it into the wax cells of the comb, then fan their wings over it for hours to evaporate the excess water. Only when the moisture is low enough — and the honey is ripe — do they seal each cell with a thin cap of beeswax. That capping is the bees’ own sign that the honey is ready.
It takes an enormous amount of foraging to fill a single jar, which is part of why genuine honey is so valued. A strong colony may visit millions of flowers to produce a modest harvest.

3. Beekeeping, explained
A honey bee colony is a single, highly organised family: one queen who lays the eggs, thousands of female worker bees who forage and tend the hive, and a smaller number of male drones. A beekeeper’s job is to keep that family healthy and to harvest the surplus honey without harming the colony.
The beekeeping year follows the flowers. In the cooler months the colony is built up and kept strong; as blossoms open, the bees gather a nectar flow; at the right moment the beekeeper harvests; and through the lean season the colony is cared for so it carries through to the next bloom. In India, many beekeepers are migratory — moving their hives to follow successive flowerings across regions and seasons.
At harvest, frames of capped comb are gently lifted, the wax cappings are removed, and the honey is spun out in a centrifugal extractor. Good raw honey is then simply allowed to settle and is strained to remove wax and debris — not fine-filtered or heavily heated, so its natural character stays intact.
4. Raw vs processed honey
Raw honey is honey as the bees made it, minimally handled. It is strained rather than micro-filtered, and not pasteurised or strongly heated. As a result it keeps its natural pollen, enzymes, aroma and full flavour — and it will usually crystallise over time, which is completely normal.
Processed or commercial honey is typically heated and fine-filtered to make it clear, smooth and slow to crystallise on the shelf. That gives a uniform, glossy product, but some of the honey’s natural character is lost along the way. Neither is “fake” on its own — the difference is how much the honey has been intervened with after the hive.

5. Types of honey
The simplest way to sort honey is by floral source. Multifloral honey is gathered from many different flowers, giving a fuller, layered flavour and a broad natural profile. 6. Why honey crystallises
Crystallisation is one of the most misunderstood things about honey. When a jar turns thick, grainy or pale, many people assume it has gone off or been adulterated with sugar. The opposite is usually true: granulation is a natural property of genuine raw honey.
Honey is a highly concentrated sugar solution, and over time some of its glucose naturally separates out as fine crystals. How quickly this happens depends on the honey’s glucose-to-fructose balance and its natural pollen content. Some honeys, like mustard, set within weeks; others, like acacia, can stay liquid for many months.
To return crystallised honey to liquid, stand the closed jar in warm water and stir gently. Avoid the microwave and never refrigerate honey, as cold speeds up crystallisation. More detail here: Why Does Honey Crystallise?
7. Purity & testing
Honey is one of the more commonly adulterated foods, usually by blending in cheap sugar syrups. Naturally, buyers want to know how to tell genuine honey from the rest. The honest answer: the popular kitchen tests are unreliable, and laboratory testing is what really settles it.
The folk tests — dropping honey in water, the thumb test, or setting it alight — are widely shared but easily passed or failed by both real and fake honey, because they mostly measure thickness and moisture rather than authenticity. The tests that actually matter are done in a laboratory:
- Moisture & sugar profile — confirms the honey is ripe and that its fructose/glucose balance fits natural honey.
- Fiehe’s test & HMF — indicators of overheating or added invert sugar syrup.
- C4 sugar test — detects added cane or corn syrup.
- Pollen analysis (melissopalynology) — reveals the floral and geographic origin of the honey.
- NMR profiling — an advanced, modern method regarded as a gold standard, able to flag newer syrups that older tests can miss.
In India, honey is regulated as a food, with quality parameters set under the Food Safety and Standards framework. Reputable honey is tested against these parameters.
8. Honey in Ayurveda
In Ayurveda, honey is known as Madhu and appears throughout the classical texts — the Charaka Samhita, Sushruta Samhita and Bhavaprakasha Nighantu among them — as a valued everyday food. It is especially noted for being yogavahi: a substance said to carry the qualities of whatever is blended with it, which is why it is the classical anupana (carrier) taken alongside many herbal preparations.
Classical tradition also advises taking honey in moderation and not cooking it or stirring it into very hot food — guidance that sits neatly with what we know today about preserving honey’s natural aroma and quality. 9. Storage & shelf life
Honey keeps remarkably well thanks to its low moisture and natural acidity. Store it in a cool, dry place away from direct sunlight, with the lid closed tight. Always use a clean, dry spoon — stray water or food can introduce moisture and spoil it over time.
Do not refrigerate honey; the cold simply hastens crystallisation. A best-before date on the jar is a quality guide rather than a hard expiry, provided the honey is stored well and kept uncontaminated.
10. Honey in the kitchen
Honey is a wonderful natural sweetener. Stir it into warm (not boiling) water, tea or milk, drizzle it over toast, yoghurt, fruit or pancakes, or whisk it into dressings and marinades. A bold honey like dark forest or jamun stands up to strong flavours, while a light acacia suits delicate dishes.
A simple rule: add honey to warm food rather than boiling food. High heat dulls its aroma and delicate character — and, as noted above, classical tradition advises the same. In baking, honey can replace sugar with small recipe adjustments, lending moisture and a gentle golden colour.
11. Common questions
Does pure honey crystallise?
Yes. Crystallisation is natural and is often a sign of genuine raw honey. Warm the jar in water to re-liquefy it.
Is raw honey better than regular honey?
Raw honey is less processed and keeps more of its natural pollen, aroma and character. “Better” depends on what you want — raw for character, commercial for a clear, always-liquid jar.
How can I really tell if honey is pure?
Laboratory testing is the only reliable way — moisture, sugar profile, Fiehe’s/HMF, C4 sugar, pollen analysis and NMR. Kitchen tests are not proof.
Why is some honey thick and some runny?
Floral source, natural moisture and crystallisation all affect texture. Both thick and runny honey can be genuine.
Can children eat honey?
Honey is suitable for children above 1 year. It should never be given to infants under 1 year of age.
How should I store honey?
Cool, dry, out of sunlight, tightly closed, with a dry spoon. Do not refrigerate.
