About Sunth and Its Traditional Ayurvedic Importance
Sunth is dry ginger, the dried and milled form of Zingiber officinale. Fresh ginger is Ardraka (Adrak); once dried it becomes Shunthi, also called Nagara, and Ayurveda regards the two as distinct dravyas with different qualities. Few herbs hold the standing that Shunthi does: it is named Mahaushadha, “the great medicine”, and Vishvabheshaja, “the universal remedy”, and it is one of the most familiar herbs in any Gujarati kitchen.
Charaka Samhita (Sutrasthana, Chapter 4) places Nagara in the Deepaniya Mahakashaya, the group of herbs that kindle the digestive fire. Bhavaprakasha Nighantu describes Shunthi in the Haritakyadi Varga. Its classical properties are summarised below:
- Rasa (taste): Katu (pungent).
- Guna (qualities): Laghu (light), Snigdha (unctuous).
- Virya (potency): Ushna (hot).
- Vipaka (post-digestive effect): Madhura (sweet).
- Dosha: traditionally regarded as pacifying Kapha and Vata.
- Karma (traditional actions): Deepana (kindles digestive fire), Pachana (supports digestion) and Ruchya (appetising).
Its pungent taste and hot potency are why Ayurveda reads Shunthi as a Kapha- and Vata-settling herb, while its sweet post-digestive effect and unctuous quality make it gentler than the fresh root. Shunthi is the first of the three pungents in Trikatu, alongside Maricha and Pippali (long pepper), and it appears in a great many classical churnas and kwaths. In Gujarati homes a pinch of Sunth with jaggery, or in a cup of tea, has long been part of the cold-season routine.

How to Use
Dose: As directed by the Ayurvedic physician.
In traditional practice, Sunth powder is taken with warm water, with a little honey or jaggery, or stirred into tea, warm milk and soups; warm water is the usual everyday vehicle. Externally, the powder is mixed with warm water into a paste and applied as a warm lepa over areas of muscle and joint stiffness, then washed off.
